wine dinner: Adamvs

Our August winemaker dinner features the wine of ADAMVS and Chateau Fonplegade.  They joined our wine program last year and many of our members have enjoyed their outstanding lineup of wines.  They share a fence line with Dunn Winery on the top of Howell Mountain, farm bio-dynamically and boast one of the top winemaking teams in the world…famed Napa wine consultant Philippe Melka and Bordeaux’s Michele Roland.  Philippe Melka consults for many of the top Napa wineries, but he is ‘the winemaker’ at ADAMVS and consults with Bordeaux’s famed oenologist, owner and winemaker of many well-known properties in both the right and left bank and consultants for Chateau Fonplegade.

Dinner guests will get to enjoy their Sauvignon Blanc, rarely served outside the winery and taste the new 2012 releases of their Napa Cabs.  The Chateau Fonplegade has been a great hit on our by the glass program and makes a great pairing with dinner.

Join us on Saturday, August 27th for a fabulous wine dinner featuring the wines of ADAMVS and Chateau Fonplegade paired with a menu created by Chef Scott Pikey.

golf course update

An update on where we are, what we are doing and where we are going.

It’s been 2 ½ months since we laid sod on our greens and are very pleased with establishment and the overall health of the greens. Playability and quality conditioning takes time and while we may not be to the level we ultimately expect, we are on our way.

We have been very patient and careful with growing in the new greens. The greens sod came to us at a mowing height that was higher than what we normally maintain our greens at. This is normal and getting them down to the height we want takes time and can cause problems if done too quickly. We have been very careful and have taken our time in doing this and are now seeing the results. The density, color and vigor of the greens is remarkable and gives us confidence we will have the conditions we desire in the near future.

Sodded greens come with inherent challenges. Challenges that frequent aeration and topdressing help to overcome. Topdressing is always important in golf course maintenance but with sodded greens it is particularly important. We want to incorporate our sand, the sand the greens are grown on, into the thatch of the sod and get everything growing in the same soil, so to speak. This is why you have seen more frequent topdressing on the new greens and can expect to see more of the same. We will always do regular topdressing, but we have been going particularly heavy with the sand recently to get as much into the canopy of the grass as we can as quickly as we can. It’s helping. As we drop our mowing heights this sand creates a firm base for the blades of the mowers to cut without scalping the turf. And once we are where we want to be mowing-wise, it will give us that firm surface we all enjoy playing on.

Our schedule going forward is to aerate our 10 new greens, as normal, starting October 4th. At this time we will also begin the process of re-grassing the remaining 9 greens, 8 golf course greens and 1 putting green. The process is expected to take 4 weeks start to finish, and by the middle of November we will have 18 new greens! Establishment will be interesting to witness as laying sod in October/November will be different than laying it in May but the timeline for establishment should be very similar to what we’re currently experiencing.

We thank you all for your patience and share with you our excitement in completing this process and re-establishing the quality conditions we all enjoy every day.

Summer SPA SPECIAL

SUMMER CAMPS

There are a few more weeks of summer left and we have a action packed camps ranging from candle making and glass fusion, to archery and fencing. Each camp may have a specific target age group who will get the most out of the camp, but there is room for all ages with a few days advanced notice so we can give the little ones the attention they deserve.

We have also extended each camp by an extra hour, from four to five hours, so you can get in a solid round of golf on our beautiful course, participate in off property wine tasting at our many nearby wineries, enjoy a luxurious day at the Mayacama Spa, or just kick back for a few hours without the kiddos. Meanwhile you can be assured that the kids are having a great time being adventurous, active, learning new crafts, and making lifelong friends. Guests are always welcome to participate in camps and pricing per camp attendee can be adjusted if you bring in a group of 3 or more. We encourage you to let us know if you have any dates or times when you would like to customize a camp, activity, or have any babysitting requests since we are flexible to accommodate your every need!

Oyster Sunday at Hog Island

As an oyster lover, I usually take a leisurely drive out the Marin Coast for a visit to Hog Island Oyster Company at least every other month.  Thursday through Sunday, the Boat Oyster Bar, their outdoor café, serves raw and BBQ oysters, local breads, cheeses, libations and house made seasonal fare at informal, communal tables alongside the bay.  Daily, the retail shop is open where you can purchase fresh oysters, harvested that day, for a shuck your own feast.

The Boat Oyster Bar is the outdoor cafe at the Hog Island Oyster Farm.  ‘The Boat’ serves raw and BBQ oysters, local breads, cheeses, libations and house made seasonal fare at informal, communal tables alongside the bay.

Hog Island oysters taste amazing because of the water in which they grow and the farming techniques that they use. The health and cleanliness of the water in which they live is essential, and the cool waters of Tomales Bay give their oysters an incredible flavor.

Hog Island produces their own oyster seeds or purchase them from trusted Pacific Coast hatcheries who, like Hog Island, nurture single oyster spats onto fragments of shell and grow them to about the size of a grain of granola. The seed is placed in mesh cylinders called Stanways.  The Stanways are then floated out in the bay so that the tides can deliver nutrient rich algae to them and gently roll them around just enough to set in motion the foundations for the thick, deep and fluted shape of their shells.

Once they are about three quarters of an inch long the oysters graduate to mesh bags which are placed on racks in an inter-tidal area of the bay. This is a classic French technique which lifts the oysters out of the mud and puts them in the best possible place to feast on all of the phytoplankton floating past.  Depending on the variety they’ll spend anything from one to two years here, filtering up to fifty gallons of seawater per day through their partially opened shells.

The oyster farm crews harvest the oysters by hand, sorting them for size and quality and taking only those that make the cut. It’s a labor-intensive process, but one that ensures that they take only the best oysters to market.  They then treat the oysters to a few days in their special “oyster spa”.  They have used their backgrounds as marine biologists to develop a special saltwater storage system that filters and chills water from the bay before it reaches the oyster storage tanks. Resting time in the tanks ensures consistently fresh, clean, premium quality oysters that retain the beautiful flavor of their home waters.

With friends and dogs in tow, we arrived at the appointed time (reservations are encouraged) and hit the Boat Oyster Bar ordering 5 dozen raw oysters, bread, cheese, beer and wine.  The oysters didn’t last long and we decided to switch to the BBQ oysters served with their famous bourbon and brown sugar sauce. At home I also make a butter, garlic and shallot sauce for a savory topping….. Yummm.

On our last visit the weather was perfect, warm but about 20 degrees cooler than Healdsburg, a great way to beat the summer heat.   When we are done for the day, we always grab a few bags of oysters to bring home and invite friends over for another oyster feed.  A bag of fifty fresh oysters usually runs about $40, a great deal. 

Wine Pairings:
One of the great pleasures for an oyster lover is the pairing of oysters and wine.  I love wines of higher acidity to act as foil for the rich fattiness of the oysters.  I also look at what I put on the oysters when making my wine selection.

My two favorite pairings with raw oysters are a great Blanc de Blanc sparkling wine or Champagne or a great Sauvgnon Blanc, local or imported.  Since I usually eat my oysters plain or with lemon or a mignonette, I find these wines a perfect paring.  With bbq oysters, I prefer a nice chardonnay with the savory and a light red with the sweet.  The fun part is you get to choose which pairing works best for you.

Visit Hog Island:
Let us set up a tasting at Hog Island for you.  Our concierge can reserve a spot for you on the shores of Tomales Bay in Marshall or you can visit Hog Island in Napa at the Oxbow market or the Ferry Building in San Francisco.  Tuesday in Marshall is shuck-your-own day.  They will give you gloves, ice and an oyster knife.  If you want to bbq, remember to bring your own charcoal.
