Autumn is here, and we couldn't be more excited at the Club. In wine country, the change of colors can be observed in the leaves on both trees and grapevines, and the shifting seasons in Sonoma County signal one thing: harvest! The Mayacama Garden provided some amazing tomatoes and other summer produce this year, and now squash, pumpkins, and more are flourishing...perfect timing for the upcoming holidays. While our Vintner Members finish harvest, we've been tending to our culinary garden.
As more space becomes available from last season's crops, planting of various root vegetables begin. Garlic, onions, shallots, leeks, and radish grow very well during the colder, shorter days. We also produce a variety of mustard greens and kale, which always seem to benefit from a touch of frost.
A unique hybrid squash named Robin's Koginut, cultivated by Joel Arcila, our Head Gardener, is currently being utilized by Executive Chef James Corwell in a new dish on the dinner menu. It's a hearty squash similar to the Japanese pumpkin or kabocha squash with intense flavors and just the right amount of sweetness.
"When I think of the fall season and food adjectives that describe it, I think of warm spice, satisfying creams, hot cider, and comforting and rich simmered meats," says Executive Chef Corwell. "Roasting squash is likely the one item that signals that time to slow down and prepare for the change of seasons. They lend themselves all too well to those flavors that the body craves as the weather cools down, heading into the holiday season."
We have included a recipe below so that you can fill your kitchen with the warming aromas of roasted squash and get a taste of Mayacama at home. Chef Corwell uses a roasted ring of squash as a tasty edible vessel for serving your favorite pasta, lentil, legume or mushroom dish.
Supplying the kitchen with fresh products from the garden is key to our philosophy of food at Mayacama.
