WINE MAKING PROCESS
Processes are done in a way that each wine is allowed to express its unique character; never compromising the wine's freshness, finesse or texture. They hand harvest and manually sort; once in the vineyard and once in the winery. The Pinot Noir is destemmed and gravity guides the whole berries into open topped fermenters.
The Chardonnay is whole-cluster pressed into French oak for fermentation. The primary fermentation lasts 2-3 weeks and the maloactic fermentation can last until early spring of the next year. Every vineyard block is traced from the harvest bins to the barrel to the settling tank before bottling.

One of the most unique aspects of Walter Hansel Winery is that no one works full time in the Winery. When various tasks need to be completed, whether during harvest or during the rest of the year, the Vineyard Manager has some of his crew work alongside to accomplish the tasks.
The team works the winery; the bottling line, and also fills and ships orders. The significance of this is that when they are working the vineyard, which requires many tedious and boring tasks, they understand how these vineyard jobs translate into world-class quality wines. By working the winery and shipping the wines, they take ownership and pride in every bottle.

More tropical in character with lots of orange marmalade and peach jam notes is the 2012 Chardonnay Cahill Lane, which comes 100% from Old Wente clones planted in Goldridge soils. Stephen Hansel told me that yields tend to be relatively large because of the fertility of the vineyard. Notes of pineapples, honeysuckle, buttered popcorn and apricot marmalade are buttressed by good acidity, an elegant yet full-throttle mouthfeel and a delicious, long, dry finish. It should drink well for 5-6 years.

Slightly better is the 2012 Chardonnay North Slope, which comes from California clones 95 and 76. Made from much smaller yields than the Cahill Lane, it sees about 40% new French oak, and reveals terrific fruit intensity along with a full-bodied mouthfeel, a good underlying wet gravel-like character, and loads of peach, pineapple and honeysuckle notes. The wine exhibits a light green hue to its color (which I always consider a positive). It can be drunk over the next 5-7 years. |

The 2012 Pinot Noir Cuvée Alyce, a blend of clones 115 and 777 grown in heavy clay soils, was made from tiny yields of one ton of fruit per acre. There are 1,125 cases of this stunning Pinot. Aged in 60% new French oak and the rest one-year-old barrels, the wine exhibits beautiful, sweet black raspberry and black cherry fruit, a touch of graphite and subtle wood, a medium to full-bodied mouthfeel, and an opulent, sexy personality. Consume this beautiful Pinot Noir over the next decade or more. |

Fashioned from Dijon clone 777, the 2012 Pinot Noir South Slope comes from a vineyard where the berries tend to be slightly bigger than those from the North Slope. It sees 60% new oak and comes across as slightly more tart and earthy, with a Pommard premier cru-like meatiness and structure. It offers more red fruits than the North Slope, particularly pomegranates, strawberries and sweet cherries, intermixed with underbrush and spice. Consume it over the next 7-8 years. |
