Billecart-Salmon Wine Offer

Billecart-Salmon is the unofficial house Champagne of Mayacama. The wine has become somewhat of a tradition here at the Club, and with the holidays just around the corner, today we are bringing you the perfect opportunity to stock up some of the most delicious bubbly produced in all the world.

Since its inception in 1811, Billecart-Salmon has been a family-run operation, currently under the tutelage of the seventh generation.

The house manages 100 hectares of estate vineyards, with the majority of the grapes used for vinification coming from a radius of 20km around Epernay, where the Grand Crus of Pinot Noir, Pinot Meunier and Chardonnay co-exist in the ethereal vineyards of the Montagne de Reims, the Vallée de la Marne, and the Côte des Blancs.

Billecart-Salmon produces a wide selection of cuvee bottlings, most of which are red fruit dominant, driven by Pinot Noir and Meunier (they do make a non-vintage and vintage Blanc de blancs, all from their grand cru Chardonnay vineyards in the Côte des Blancs).

The house style is elegant, driven by the philosophy to harvest higher acid, lower alcohol grapes. Depending on the cuvée, base wines may be fermented in oak or stainless steel. Those that are fermented in oak do not go through malolactic fermentation.  Wines are fermented slowly and at cool temperatures to preserve freshness and are aged on their lees for four to five months before the bottle fermentation.

Today’s Mayacama wine offer brings you unlimited access to two Billecart-Salmon bottlings; Brut Rosé NV and Brut Réserve NV.

BRUT ROSÉ – A romantic Champagne with its subtle and gourmand aromas, this cuvée provides a reference point amongst rosé champagnes. It will bring real pleasure to your happiest moments with its sparkling colour, amazing finesse and great intensity. The Brut Rosé is a blend of Chardonnay, Pinot Meunier and Pinot Noir vinified as red wine. 40% Chardonnay sourced from the best Crus in the Champagne region, 30 % Pinot Noir from the Montagne de Reims and the Grande Vallée de la Marne, and 30% Pinot Meunier from the Vallée de la Marne and the southern slopes of Epernay. Vinification in stainless steel. Aged on the lees for 36 months.

BRUT RÉSERVE – The Brut Réserve is a light, fine and harmonious champagne. It is made up of a blend from three different years and sourced from the best sites in the Champagne region. 30% Pinot Noir from the Montagne de Reims and the Grande Vallée de la Marne, 30% Chardonnay sourced from the best Crus in the Champagne region, and 40% Pinot Meunier from the Vallée de la Marne and the southern slopes of Epernay. Vinification in stainless steel tanks. 50% to 60% reserve wines. Aged on the lees for 30 months.
